Totally scrapped the post I was writing. That Girl can be such a downer. But This Girl is on her way up!
After a wicked migraine episode, the worst I have ever had, I slept better than I have slept in a year and that ain’t no lie. Seriously. Woke up feeling so stinking good that I wondered if I was really awake or still dreaming. I did, initially, take it easy and sipped hot tea and toast with a dribble of honey. I just felt so good I couldn’t waste it.
Made breakfast for My Men. Bacon and eggs. Pastor’s Wife next door texted me that she had made biscuits and to come on over. So I did. Wearing my jammies, slippers and a Spartan Football sweatshirt. Also had made a weak *okay, weak for me* cup of coffee with half regular beans and half pumpkin spice beans from Trader Joes. Went perfectly with the biscuits.
Before I headed over there, I cut up apples and got my applesauce going. So, here is the big, secret recipe, that I got from my mom.
Cut up apples in to quarters. Leave on skin; leave all the seeds intact. Toss in a pan. Add about 1/4 cup of water to the apples. Cover. Cook for about 20 minutes. I let mine sit for about 20 after they are done cooking. Run through the food mill into a bowl. DONE. I add nothing to mine. No spices; no sugar. Nana adds some sugar to hers which makes all of the grandchildren, especially Megs, drool at just hearing the words, “Nana’s Applesauce” spoken.
If you don’t have a food mill *Nana gave me mine* you can peel and quarter the apples, removing all the seeds and then cook them down and use a potato masher. I have done them that way, too, but really, if you already have a food mill or if you’ve been wanting one, the extra step of cranking the food mill is actually easier than slicing and peeling the apples and the apple peel gives the sauce I lovely pink color.
If you like sugar and spices in your applesauce, by all means add some. I promise you that I will not be offended.
I decided today, whilst trying to find my dining room table, that I have too much stuff. So, I’m packing some stuff up to go…somewhere. I don’t know where yet. I just know it has got to go. After last year’s Yard Sale from H. E. Double Toothpicks, I have vowed to never hold another one. I do have boxes packed up for the darlings IF THEY EVER MOVE OUT AND GET THEIR OWN PLACE. At this point, I’m about ready to pay them to move out. If they did, I wouldn’t need to get rid of stuff. *that is how my twisted mind really works*
As if The Wild Boy being a senior isn’t traumatic enough, two of my favorite girls ever turn 18 today. This is traumatic because I have loved them since they were littles, which seems like just yesterday. They, too, are seniors. In less than a month, my twin nieces turn 21. IMPOSSIBLE. Willtina will turn 19 in January and then The Wild Boy will turn 18. Slow. Down. Time.
Actually, today at least, I am loving all the excitement of this year. One of the senior football players put it into perspective: Football is over and now we can focus on senior year. So…you heard it here first:
I hereby swear that I am going to embrace this next year and enjoy it.
Dude, that was hard to say. But I am going to do it.
